Oral history interview with Frank Cuellar, Sr., 1978 July 13 and August 9.

Interview with Frank Cuellar, Sr. concerning his experiences as founder and Chairman of the Board of El Chico Corporation. Cuellar discusses his family background, his education problems, his work as a barber, and his employment in the kitchen of the Adolphus Hotel. He also talks about "Mama" Adelaida Cuellar's Mexican food stand at the Kaufman County Fair in 1926, the opening of the first "Cuellar's" restaurant in 1928, and the expansion of the restaurant to other towns. Cuellar speaks of the Depression, his work on a ranch in Mexico, the opening of the first El Chico restaurant in Dallas in 1940, its incorporation in 1949, the start of a canning operation, and the frozen food business. Cuellar also explains sources of supply and quality control, personal ownership of restraurant real estate, the philosophy of management at El Chico, legal disputes, federal regulations, the merger with Campbell-Taggert, the introduction of frozen pizza, business ventures after "retirement," and community and trade association involvements.
